Pumpkin Empanadas
Celebrate fall flavors with these easy pumpkin empanadas! Made with refrigerated pie crust and creamy pumpkin puree, they're a simple homemade treat that's perfect for breakfast, dessert, or an afternoon snack.
Ingredients
- 1 package refrigerated pie crusts (2 crusts)
- 1 cup pumpkin puree
- 2 tablespoons brown sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 egg, beaten
- Optional: cinnamon sugar for sprinkling
Directions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- In a small bowl, combine pumpkin puree, brown sugar, pumpkin pie spice, and vanilla.
- Roll out pie crusts and cut into 4-inch circles using a cookie cutter or drinking glass.
- Place about 1 tablespoon pumpkin filling in the center of each circle.
- Fold dough over to form a half-moon shape and press edges with a fork to seal.
- Brush tops with beaten egg and sprinkle with cinnamon sugar, if desired.
- Bake for 18-22 minutes, or until golden brown.
- Let cool slightly before serving.
Optional Glaze Mix ½ cup powdered sugar with 1-2 teaspoons milk and drizzle over cooled empanadas for a sweet finishing touch.
